November is one of my very favorite months for baking and cooking. Everybody seems to slow down just enough to appreciate comfort food this time of year. One of my favorite things to bake for my family is a traditional pumpkin bread with a twist. It’s the perfect comfort food this time of year!
Over the years I’ve found two tricks that make it even more yummy! Sprinkle a little brown sugar on top of it before you bake it. It adds a tiny sweet crunch AND as soon as you take it out of the oven, immediately wrap it tightly in cling wrap. It keeps it super moist! Add a small amount of cream cheese on top and it’s perfect for breakfast, dessert or after school snack!
